Welcome to my new recipe Eel Soup. This is a hearty fish soup wonderfully suitable for cool weather – North German “shitweather” ūüôā

In Hamburg the eel soup is called like this because “aal” or “all” is in it. Most people know “all inclusive” – that’s how it is meant. It is originally a leftover soup that contains “alles” (= everything, High German) = “all” (Low German). The inclusion of the fish eel came later, it was not included at first.

Promised, our eel soup is with real eel and also the baked fruit, which belongs to it after Hamburg kind.

Here you find my recipe Kale Soup vegetarian. My soup is a basic soup with many variations. 

Kale, also called brown cabbage in some German regions, is mainly served in Northern and Central Germany. There, the beautiful green cabbage usually ends up on the plate heavily overcooked with fatty meat and sausages. So far, the traditional way.

I am a friend of the use of regional ingredients, which are prepared according to the modern spirit of the time. I do not want to deprive our cabbage of its vitamins and colour and prefer short cooking times. Optics and taste experience are suddenly sensational and let the vegetables shine in new splendor!

Today I’ll show you my Black Salsify Soup recipe. The black salsify as a delicate vegetable in the soup, lightly and finely cooked.

The long, slender black salsify almost fell into oblivion, thanks to “asparagus all year round”.¬†

The white root on the inside and the black root on the outside were popular as asparagus substitutes for a long time. We know the roots as miner’s asparagus and winter asparagus. The season is from October to May.

Now the root has emancipated itself from the real asparagus and can shine with its fine taste in the kitchen and on the table.

I am definitely a fan of black salsify!

Potato Soup with Shrimps, an original North German Soup with North Sea Shrimps

The recipe potato soup with crabs I present to you in this article. You can put this soup on your own table in less than 30 minutes and give your loved ones a real treat.

North Sea prawns taste absolutely great. These shrimps are browner than other small shrimps. You can order the prawns on the internet or prepare this soup with small, normal shrimps.

Besides potatoes I use carrots for the soup, because the sweetish taste of the carrot fits perfectly to the North Sea crab.¬†To make the soup a highlight on the table, I mix part of the soup before serving. You can also prepare the soup with more inlay, in which case it’s already a potato stew with crabs.

I know the “most delicious cucumber soup” with salmon tartare in the variant presented here from my apprenticeship at Alfons Schuhbeck. At that time we used a red wine vinegar. Today I like to use raspberry vinegar or lemon juice.
