For all friends of Austrian cuisine, the recipe for Styrian pumpkin cream soup with pumpkin seed oil, dill and bacon is a classic. Styria is a wonderful federal state in Austria and has a lot to offer in terms of food and landscape. This pumpkin soup is prepared with whipped cream and coconut milk has no place here. The only outlier is ginger, which many of my Styrian friends have recently added to their soup, I add this ingredient to the list of ingredients optionally. The special thing about this traditional pumpkin soup? Creamy appearance, crispy black bread cubes, dill, crispy bacon and fresh horseradish make this soup a top highlight of international cuisine. Please try it out quickly and enjoy! Jump directly to the recipe.

1. Prepare your own Styrian Pumpkin Soup

Here I describe the simplest way of making soups step by step:

  1. Use a Hokkaido Pumpkin, Muscat Pumpkin or Butternut Pumpkin for this recipe.
  2. Halve the pumpkin with a knife, scrape out the seeds with a spoon and remove.
  3. Remove the pumpkin bowl with a knife, with the Hokkaido pumpkin you can use the bowl and save yourself the peeling.
  4. Cut pumpkin with skin or peeled pumpkin into small pieces and place in a high pot.
  5. Peel an onion and a clove of garlic, cut both into small pieces and place them in the pot with the pumpkin.
  6. Add some ginger (optional).
  7. Cover the ingredients in the pot with water, add the vegetable stock (powder or cube), season with salt, pepper and nutmeg.
  8. Add a little dry white wine, bring to the boil and let simmer for 25 minutes.
  9. Bring the soup to the boil again, pour the whipped cream into the boiling soup and it will not flocculate.
  10. Pass the pumpkin soup through a fine sieve to taste or prepare it for serving as prepared.
  11. Prepare the soup topping: Roast the black bread cubes in butter and season with salt and pepper, skip the bacon cubes, prepare the dill, prepare the horseradish finely torn.
  12. Mix pumpkin seed oil with a hand blender, season with salt, pepper, cayenne pepper and some ornamental juice.
  13. Finally mix the pumpkin soup with cold butter and froth up, arrange, add the soup and serve quickly.

Ingredients
  • 400 g pumpkin Hokkaido pumpkin or nutmeg pumpkin
  • 1 pc onion
  • 1 pc garlic
  • 1 slices ginger optional
  • 500 ml water
  • 200 ml vegetable broth
  • salt
  • black pepper
  • 3 pinches nutmeg
  • 40 ml dry white wine oder Prosecco
  • 1 cups cream the name of cream in Azstria is "Schlagobers"
  • 100 g bacon cubes
  • 100 g brown bread you can also take glutenfree bread
  • 1 tbsp Dill dried or fresh
  • 1 tbsp. horseradish freshly torn
  • 50 g Butter Put it cold to mix the soup before serving.
  • 4 tsp pumpkin seed oil

  1. Halve the pumpkin with peel, remove the stalks and scrape out the seeds with a spoon. Use Hokkai pumpkin and Butternut pumpkin with peel, Muscat pumpkin please peel.
  2. Cut the pumpkin pieces into small pieces and place them together with the finely chopped onion and garlic in a pot and cover with water. Season with vegetable stock, salt, pepper, nutmeg, add a little dry white wine.
  3. Bring the soup to the boil and simmer slightly for 25 minutes, allow to simmer until flowing, bring the soup to the boil, pour whipped cream into the boiling soup, mix and keep warm.
