Ingredients
  • 8 tomatoes
  • a little sugar
  • 500 ml water
  • 1 tbsp black tea Lapsang Souchong
  • 2 pieces of spring onions
  • 1 garlic clove
  • 4 tbsp olives
  • 60 ml white wine dry
  • 300 ml vegetable stock
  • 60 g Butter
  • 2 pieces of hake
  • 1 bunch of basil
  • salt
  • pepper
  • 1 tbsp hemp seeds

Halve the tomatoes and remove the stem base. Lay the tomatoes with the cutting edge facing upwards on a plate and season them with salt and a little sugar.

In a wide pan, bring water to a boil, add "Lapsang Souchong" tea from www.bio-tee.com.

Reduce or turn off the heat and let the tea steep for a while.

Halve and slice finely the onions, sear them together with the garlic in a pan with some olive oil.

Add the tomatoes, let it shortly sauté, then deglaze with the white wine. Fill up with the vegetable stock, the tomatoes should be covered - now cook it lightly.

Melt and foam the butter in an extra pot, season with salt and pepper. Prepare a brush to cover the cooked hake fillets with butter.

Lay the fish into the own with the tea and cook for about 5 minutes (poach).

Cut finely the basil and add it to the tomato stock, season again with salt and pepper.

Serve the tomato stock in bowls, take the hake pieces out of the pan and cover it with the melted butter.

Add the hake fillets to the tomato stock and sprinkle with hemp seeds. Serve quickly and enjoy!

Cooking tip:

This recipe also works with codfish but do not use salmon!
