Salmon Pasta – Salmon Noodles
Recipe for salmon noodles with cream sauce from fresh salmon or smoked salmon with many tips from Thomas Sixt.

Ingredients
  • 1pc onion
  • 1/2pc garlicI love to take young green garlic for this dish
  • 25g Butter
  • 100ml dry white wine
  • 200ml vegetable brothor chicken broth
  • 250ml cream
  • some salthimalaya salt
  • some black pepper
  • some Cayenne pepper
  • some nutmeg
  • 1tsp. cornflourfor tying the sauce
  • 1tsp. lemon juice
  • 150g salmon filletprepared fish fillet without skin and bones
  • 250g Pasta or Noodlestagliatelle or spaghetti or other egg-free noodles
  • some fennel greenoder Petersilie oder Kerbel oder Thymian
Instructions
  1. Finely dice peeled onion and garlic clove and sauté in butter for ten minutes until colourless. Deglaze with white wine, add vegetable stock, bring to the boil, slowly reduce the cream.
  2. Let the sauce infuse for 15 minutes, season with salt, pepper, cayenne pepper and nutmeg.
  3. Mix the starch in 100 ml water and add to the boiling cream sauce. Bring the sauce to the boil briefly and let it set. Let the sauce infuse for another 10 minutes at low heat. Cut the salmon into small pieces and make ready.
  4. Cook the pasta in plenty of salted water until al dente, drain and shake well. Add the salmon to the boiling cream sauce, stir and leave to stand next to the stove.
  5. Arrange the noodles on warm plates. The best way to do this is with a large meat fork. Twist the noodles open with a fork and put them in the plates. Add salmon and sauce to the pasta and decorate with fennel green, chervil or parsley and serve.
