The radicchio is a type of chicory, recognizable by its beautiful red color, it makes every salad a feast for the eyes.

Ingredients

1 Piece big potatoes
1/2 Piece glove of garlic
3 tbsp white wine vinegar
1 tbsp cold water
1 pinch majoram
3 pinches primal salt
1 tsp brown cane sugar
5 tbsp Olive oil
2 Piece radicchio
1 Piece aubergine (Alternatively a zucchini)
4 Pinches black ground pepper
3 tbsp Sunflower oil
80 g gorgonzola
2 tbs chopped walnuts

Instruction

Fresh Potatoes
Predominantly waxy potato variety.

Prepare potatoes

Wash and peel potatoes.

Boiled potato cubes
Potato cubes cooked on a sieve.

Diced potatoes

Cut the potatoes into 1 cm cubes and cook in salted water until done, drain and set aside.

Salad Dressing

Prepare radicchio salad dressing:

-> Finely chop the garlic.

-> Put the vinegar and water in a bowl, add the spices, mustard and garlic and mix well with a whisk.

-> Then slowly pour in the olive oil, stirring constantly so that the vinegar and oil mix well.

Pick the radicchio into mouth-sized pieces and wash briefly in plenty of cold water.

Spin salad

Then dry the lettuce leaves with a cloth or in the salad spinner.

Grill zucchini
Fry zucchini in a grill pan

Prepare vegetables

Slice the aubergine and fry vigorously in a pan with the sunflower oil.

Alternatively, use a zucchini.

Turn the vegetables over, season with salt and pepper and set aside to serve.

Prepare gorgonzola

Break up the Gorgonzola cheese into small pieces with a spoon and set aside to serve.

Stir the salad dressing vigorously and marinate the prepared radicchio in it.

Remove with salad servers, drain briefly and arrange on plates.

Place the aubergine slices, diced potatoes and small pieces of gorgonzola over the salad and serve sprinkled with the walnuts.

Alternatively, you can briefly fry the potato cubes in a pan and put the cheese in the pan just before serving.

The cheese then gently melts and your radicchio salad becomes a warm appetizer .

3. Tips for Your Radicchio Salad Dressing

I would like to start with the dressing for the radicchio salad :

The lettuce is bitter in taste and therefore tolerates a sweet dressing with brown cane sugar , honey or stevia .

My basic dressing is white vinegar , mustard , salt , sugar and pepper , and oil .

When it comes to mustard, Dijon mustard is the first choice, medium-hot mustard is OK, but doesn’t taste all that exciting.

3.1 Order of Ingredients, Important when Preparing the Dressing!

Here I am going to explain two variants of marinating salads to you today, interesting because the basic tips for marinating salads come across so vividly:

3.2 Marinate the Radicchio Salad – the Grandma Variant

My grandmother didn’t have a salad spinner.

The lettuce was plucked into small pieces, washed clean several times in cold water, then placed on a colander.

With this variant, some water remains on the lettuce. If you were to use a dressing made with oil for marinating, the dressing would hardly stick to the lettuce leaves.

This is due to the surface tension of the water. If you don’t want to or can’t spin your lettuce dry, let the lettuce leaves drain well and marinate with a vinegar stand:

Vinegar, mustard, sugar, salt and pepper, when the leaves are well marinated add the oil and mix well.

3.3 Marinate Radicchio, the Professional Chef Variant

Professional chefs pluck the lettuce and quickly wash it in cold water.

The lettuce can then be used on a carousel in the salad spinner so that it dries well.

Dry lettuce goes well with a ready-made salad dressing made from vinegar, salt, pepper, mustard, sugar and oil.

This is because only the dry lettuce leaves will accept the salad dressing with oil.

I’ll show you how to wash lettuce elsewhere, be careful with lamb’s lettuce, it needs special treatment, and I’ll show how to wash lamb’s lettuce in a second article.

Marinate the salad: spinach leaves, apple wedges, radish julienne and celery in a bowl with salad dressing.

4. Tip for Preparing Radicchio Salad with Oranges

A very popular combination consists of radicchio salad and oranges. You can peel the oranges and cut them into small pieces or prepare really great orange fillets, I have a video for you about that:

Today I combine the radicchio salad with diced potatoes and gorgonzola.

I like this combination, oranges or goji berries would also go well with it because it adds a sweet component.
