Here I show you my Bacon Beans Recipe.

The green beans with bacon are a popular side dish.  

What should I bear in mind when preparing them? Which bacon do you use? How do the beans stay green?

Bacon beans go excellently with steak and roast lamb.

Ingredients

200 g green beans
1 tsp Salt (I use Himalayan salt)
80 g bacon
1 pc red onion (or yellow or white onion)
1/2 pc clove of garlic
3 pinches Pepper
30 g butter

Instruction

Clean the green beans
Clean green beans or green beans.

Prepare beans

Wash and dry the beans and cut off the ends.

Prepare pot

Prepare the beans for blanching.

Place a pot of water on top and bring to the boil.

Season to taste with salt.

Boil raw beans
Boil beans in salted water.

Blanch beans

Place the beans in the boiling water and blanch until al dente.

Firm to the bite Cool cooked beans
Blanch the beans and let them cool.

Cool beans

Then cool the cooked beans in cold water. Water with ice cubes is ideal.

Chop the beans
Chop the cooked beans.

Cut beans

Cut the beans into small pieces.

Onion and garlic

Halve and peel the onion and garlic.

Cut the garlic into small pieces.

Prepare the bacon and onions
Cut the bacon into cubes and the onion into strips.

Prepare bacon

Finely dice the onion and garlic.

Get the bacon cubes ready.

Roast the bacon, add the onions
Sweat the bacon and onions.

Sweat ingredients

Saute the bacon in the pot and fry until crispy, then add the onion slices and sweat along.

Add the garlic and leave to simmer next to the heat.

Add beans

Add the cooled and drained beans to the bacon and onions.

Serve

Next refine with neutral oil or pumpkin seed oil.

Try salad and season to taste with salt, pepper and sugar.

Tip for cutting bacon:

Briefly freeze the bacon slices, the bacon is easier to cut this way.

Tip for breakfast bacon:

I recommend a high-fat, smoked bacon for the beans.

If you use breakfast bacon, fry it longer until crispy.
