Here I show you my Black Salsify Vegetables. The black salsify is regionally also called winter asparagus, miner’s asparagus and asparagus of the poor man.

The season for this delicious root vegetable is from October to May.

The striking dark roots contain vitamins E, A, C and various B vitamins. They also contain the minerals potassium, magnesium, calcium and iron. The root also contains the fibre inulin, which supports the fat metabolism and harmonises the intestinal flora.

The wild black salsify was used in early times as a medicinal plant against the plague and snake bites. The vegetables originate from Southern Europe and have been cultivated here since 1700.

The root vegetable tastes excellent in butter glazed and is a great side dish to braised roast, duck and goose. 

Today I recommend you to perform like a surgeon in your kitchen! Since the black salsifies stick terribly when peeling, rubber gloves are a recommendable equipment!

Today I’ll show you my Black Salsify Soup recipe. The black salsify as a delicate vegetable in the soup, lightly and finely cooked.

The long, slender black salsify almost fell into oblivion, thanks to “asparagus all year round”. 

The white root on the inside and the black root on the outside were popular as asparagus substitutes for a long time. We know the roots as miner’s asparagus and winter asparagus. The season is from October to May.

Now the root has emancipated itself from the real asparagus and can shine with its fine taste in the kitchen and on the table.

I am definitely a fan of black salsify!

Today I’ll show you my Spaetzle recipe. We want to have a closer look at the popular side dish and then prepare it ourselves.

We also know Spätzle by the names Spaetzla, Spatzen and Spaetzli. It is a Swabian or Alemannic pasta in elongated form. The related knöpfle are rather round in shape and at home in the region of Baden-Württemberg and in Bavarian Swabia.

In Austria this pasta is called Nockerl.

Spaetzle, Knoepfle and Nockerl are egg pasta from fresh egg with an irregular form. The surface of this noodle is rough and porous, it absorbs sauces well.

How to cook Spaetzle: The whipped, tough dough is scraped in the traditional production over a Spätzle board (wooden board) directly into the boiling salt water.

Depending on the consistency of the dough, the spaetzle slicer produces short buttons or elongated spaetzle. The recipe presented here is a Bavarian-Austrian joint production and brings you delicious Spaetzle on your plate.

The dish is vegetarian with egg, hints for a vegan variation are included in the recipe.

As a true Bavarian, I find the Austrian version of potato salad exciting and varied.
