I love raspberries. Fresh raspberries are now available all year round. But they are also available as off-season fruit from June to August at a very competitive retail price. 

To be honest, bought jam does not taste as good to me as home-made jam. So in winter the best option for a delicious marmalade on the breakfast table is to use the freezer. 

With raspberries, I could even see that the jam made from frozen fruit is in no way inferior to the jam made from fresh fruit. 

Great news: We’ll save time, money and be independent of the gardening season!

Salmon in the Oven exciting Recipe with Cauliflower for Low Carb Gourmets

Today I would like to recommend you my recipe Salmon in the Oven with Cauliflower.  This dish impresses with new ideas for a dish with little effort and Star Kitchen quality.

I am an advocate of the holistic use of all ingredients of the kitchen, wherever possible. That’s why I find it a pity that some parts of plants, such as the cauliflower leaves, are often simply disposed of. Because they are in fact a culinary and visual enrichment on the plate.

All in all, I use the entire cauliflower in this recipe. Even the sweetish cabbage juice is included. This is great! To avoid wheat products, I crown the finely cooked cauliflower with an almond topping.

You can cook my recipe 1:1 as part of a low carb diet. Also satiation side dishes with carbohydrates, as you know it, can be part of your personal dish. I would personally find boiled potatoes or mashed potatoes ideal.

At the happy end, our plate will be overflowing, rich in vitamins and an incredible treat!

I am a friend of the use of regional ingredients, which are prepared according to the modern spirit of the time. Wash and clean Chanterelles, so you bring Mushrooms without dirt into the Pan!

Mushrooms from nature usually come with luggage into the kitchen.

Sand, needles, moss and insects are unwelcome companions.

The type of fungus plays a subordinate role here. Tube mushrooms such as bay bolete and porcini mushrooms, lamellar mushrooms such as chanterelles and meadow mushrooms… all mushrooms naturally have a cuddly surface.

I have found that forest dwellers of all kinds are magically attracted to mushrooms. I think they actually meet under the umbrella!

Cooks don’t like to wash mushrooms so much, the cooking guild is a few as an exception: During washing, the hat journeymen lose their aroma.

It would be a full evening discussion to find out how much taste is lost in the wash. Or is it perhaps even the forest companions that make up the typical taste of mushroom dishes in the end?

A simple statement… If the mushrooms are very dirty, please wash them. If the dirt can be removed easily with a brush, then please do without washing.

The reduced balsamic vinegar is then a balsamic ice cream. This “thick” balsamico sauce tastes very strong and hardly melts on the plate, harmonizes perfectly with strawberries and asparagus.

The recipe Dorado  for the oven with asparagus shows you how to grill Dorade in the oven. You have read correctly. Today I’ll show you a simple way to prepare the great gilthead.

You can also prepare other fish like trout, char or sea bass in the same way. I love the recipe for the oven! The gilthead is also known as gilthead sea bream, Dorade Royale, Dorada or Orata. An exact description can be found on Wikipedia.

Oven grilling of gilthead has several advantages. On the one hand the grill in the garden does not need to be heated or cleaned, on the other hand the preparation is very fast and effective.  

This type of preparation is really healthy. I only use olive oil and some butter for the potatoes.

Beef Salad with Leaf Salad and Asparagus, Recipe for Boiled Beef

My Beef Salad recipe is an extraordinary recipe and I got to know the way of preparation during my apprenticeship at Alfons Schuhbeck.

The boiled beef is cut into slices, marinated in hot Dijon mustard, then breaded with Wiener Griessler rose flour and fried in a little fat or vegetable oil in a coated pan.

This is not a normal beef salad with vinegar and oil but a real gourmet variation. You can prepare the beef salad with beef in the mustard crust from boiled beef or from fresh beef.

For fresh beef, use only short roasts such as fillet of beef, hip steak or roast beef.  Make sure that the meat is well hung. After all, tough meat is not a pleasure to eat on your plate.    

The salad simply succeeds and is on the table in less than 40 minutes. The following Kitchen Story gives you good instructions on how to cook it yourself.
