I love raspberries. Fresh raspberries are now available all year round. But they are also available as off-season fruit from June to August at a very competitive retail price. 

To be honest, bought jam does not taste as good to me as home-made jam. So in winter the best option for a delicious marmalade on the breakfast table is to use the freezer. 

With raspberries, I could even see that the jam made from frozen fruit is in no way inferior to the jam made from fresh fruit. 

Great news: We’ll save time, money and be independent of the gardening season!

Salmon in the Oven exciting Recipe with Cauliflower for Low Carb Gourmets

Today I would like to recommend you my recipe Salmon in the Oven with Cauliflower.  This dish impresses with new ideas for a dish with little effort and Star Kitchen quality.

I am an advocate of the holistic use of all ingredients of the kitchen, wherever possible. That’s why I find it a pity that some parts of plants, such as the cauliflower leaves, are often simply disposed of. Because they are in fact a culinary and visual enrichment on the plate.

All in all, I use the entire cauliflower in this recipe. Even the sweetish cabbage juice is included. This is great! To avoid wheat products, I crown the finely cooked cauliflower with an almond topping.

You can cook my recipe 1:1 as part of a low carb diet. Also satiation side dishes with carbohydrates, as you know it, can be part of your personal dish. I would personally find boiled potatoes or mashed potatoes ideal.

At the happy end, our plate will be overflowing, rich in vitamins and an incredible treat!

For a long time I have been suspecting that meat is only carried by smoking, curing and its spices. The interesting thing is: banal tofu can do that too. If I use smoked tofu and use the same herbs, I get the same taste experience as with meat.

You don’t necessarily have to be vegan or vegetarian to like this vegetable liver sausage.

Welcome to my new recipe Eel Soup. This is a hearty fish soup wonderfully suitable for cool weather – North German “shitweather” 🙂

In Hamburg the eel soup is called like this because “aal” or “all” is in it. Most people know “all inclusive” – that’s how it is meant. It is originally a leftover soup that contains “alles” (= everything, High German) = “all” (Low German). The inclusion of the fish eel came later, it was not included at first.

Promised, our eel soup is with real eel and also the baked fruit, which belongs to it after Hamburg kind.

Here I show you my Black Salsify Vegetables. The black salsify is regionally also called winter asparagus, miner’s asparagus and asparagus of the poor man.

The season for this delicious root vegetable is from October to May.

The striking dark roots contain vitamins E, A, C and various B vitamins. They also contain the minerals potassium, magnesium, calcium and iron. The root also contains the fibre inulin, which supports the fat metabolism and harmonises the intestinal flora.

The wild black salsify was used in early times as a medicinal plant against the plague and snake bites. The vegetables originate from Southern Europe and have been cultivated here since 1700.

The root vegetable tastes excellent in butter glazed and is a great side dish to braised roast, duck and goose. 

Today I recommend you to perform like a surgeon in your kitchen! Since the black salsifies stick terribly when peeling, rubber gloves are a recommendable equipment!

The long, slender black salsify almost fell into oblivion, thanks to “asparagus all year round”. 

The white root on the inside and the black root on the outside were popular as asparagus substitutes for a long time. We know the roots as miner’s asparagus and winter asparagus. The season is from October to May.

Now the root has emancipated itself from the real asparagus and can shine with its fine taste in the kitchen and on the table.

I am definitely a fan of black salsify!

Now I would like to introduce you to my Béchamel Sauce recipe. This sauce is the basic sauce and all-purpose weapon in the kitchen and belongs with its innumerable variation possibilities to the basics of the art of cooking.

ATTENTION Show-off knowledge: 
Louis de Béchamel (1630-1703) is the eponym of the legendary sauce and was the Lord Chamberlain of Louis XIV. However, the history of the basic recipe is not clearly historically documented. The origin can also be derived from the sauce Mornay – developed in the kitchen of Count Philippe de Mornay. The Mornay sauce contains cheese as well as flour and butter.

For me as a teenager, the first hamburger was like a streak of light in the grey soup of my everyday life in a small town!

Nowadays there are many variations of the meatball rolls everywhere. That is why I would like to introduce you to some delicious specialities.

Here comes my recipe Hawaiitoast. The still popular combination “sweet plus hearty with cheese baked on bread” comes from the German economic miracle years.

In 1955, actor and TV chef Clemens Wilmenrod, who had no cooking training at all, introduced the fast snack to German TV viewers. There were only 3 channels 😉

Why Hawaii? Until the 50s Hawaii was the main producer of canned pineapples (Dole Food Company) and was then replaced by the Philippines and later Thailand.

Accordingly, Mr. Wilmenrod should have called his toast creation “Toast Philippines”.

Undisputedly, Hawaii sounds more melodic and you immediately have pictures of beautiful Hawaiian girls dancing hula in mind.

Today I will show you the original Paella recipe from Spain. For this great dish I went hiking and went on a pilgrimage. I came to Lucus, the sacred forest of early times and from the 13th century the first Marian shrine of the Balearic Islands.

The spiritual centre of Mallorca is the sanctuary of Lluc with the Black Madonna statue. It is a religious centre in the middle of the lush nature of the Serra de Tramuntana.  The monastery is a world cultural heritage, for me personally a magical place with an incredible, positive vibration.

The restaurant Sa Fonda is located on the left side of the monastery. It offers its day guests and pilgrims original Spanish cuisine. In the kitchen there is chef Manuel who conjures up the most delicious traditional dishes of Mallorcan cuisine.

My Potato Gratin recipe I show you on this page. I got to know Gratin Dauphinois, as the recipe is called in French, during my apprenticeship in a restaurant that was awarded a star by the Michelin Guide.

Spaetzle Recipe for Original German Noodles named Spätzle

Today I’ll show you my Spaetzle recipe. We want to have a closer look at the popular side dish and then prepare it ourselves.

We also know Spätzle by the names Spaetzla, Spatzen and Spaetzli. It is a Swabian or Alemannic pasta in elongated form. The related knöpfle are rather round in shape and at home in the region of Baden-Württemberg and in Bavarian Swabia.

In Austria this pasta is called Nockerl.

Spaetzle, Knoepfle and Nockerl are egg pasta from fresh egg with an irregular form. The surface of this noodle is rough and porous, it absorbs sauces well.

How to cook Spaetzle: The whipped, tough dough is scraped in the traditional production over a Spätzle board (wooden board) directly into the boiling salt water.

Depending on the consistency of the dough, the spaetzle slicer produces short buttons or elongated spaetzle. The recipe presented here is a Bavarian-Austrian joint production and brings you delicious Spaetzle on your plate.

Boeuf à la Mode Recipe, Bavarian-Style Roast Beef Preparation

Today I show you my recipe Böfflamott or Boeuf à la mode. Boeuf à la mode is the Bavarian variant of the beef braised roast, you can refine the sauce with cognac.

For the preparation I recommend the “flat beef shoulder”, which is also called “shovel bow”. Other suitable pieces of meat for the roast beef are: False fillet, boiled beef, ball and flower or the tail roll. Ask your butcher or simply order the “flat beef shoulder”. 

I let the beef mature in a stain for 3-4 days. The stain consists of red wine, root vegetables, red wine vinegar and various spices.

A dry Burgundy is optimal for the Bavarian beef braised roast. The older the wine, the more powerful the sauce becomes.  I also prepare the sauce with veal stock.

Marinated Stewed Roast Beef Recipe German Rinderbraten with Chef Step by Step Instructions

Today I’ll show you my Roast Beef recipe. This is the Original German Sauerbraten from Germany!

I recommend you a “flat beef shoulder”, also called “shovel bow”. You can also use another stewed beef. Ask your butcher or order the “flat beef shoulder”. This is best cut into even slices after stewing. I put the meat traditionally for 3-4 days in a stain. I cook the stain from root vegetables, red wine and some balsamic vinegar (instead of red wine vinegar).

A red wine like dry Burgundy or Rioja later gives the sauce a great taste. The Spanish Rioja wines spend a longer time in the barrel, so these wines develop great aromas that benefit the sauce and flatter the palate.

The balsamic vinegar provides a dark colour and a balanced acidity. In addition, a veal stock is added to my sauce before braising.

Today I’ll show you my recipe for Meatloaf. Do you know “false hare”? The “wrong rabbit” is no rabbit at all. It is the name for a meat loaf with or without egg inside.

The following recipe comes from the kitchen of my dear mum and is a component of the traditional German kitchen.

It is suspected that the name “Falscher Hase” was given by the form of roasting in Germany. Likewise it is to be also because of the fact that the wrong hare was prepared in the same roaster, like the genuine hare bridge from the oven.

It’s a poached redfish fillet with mashed potatoes and mustard sauce. The warm mustard sauce goes well with cooked seafood like cod, redfish, sole, plaice and salmon – as well as freshwater fish like pikeperch, trout, perch and carp.

You can fry or poach your fish, even freshly smoked fish goes well with warm mustard sauce.

North Sea prawns taste absolutely great. These shrimps are browner than other small shrimps. You can order the prawns on the internet or prepare this soup with small, normal shrimps.

Besides potatoes I use carrots for the soup, because the sweetish taste of the carrot fits perfectly to the North Sea crab. To make the soup a highlight on the table, I mix part of the soup before serving. You can also prepare the soup with more inlay, in which case it’s already a potato stew with crabs.

The biscuit cake “Kalter Hund” has many names: Lucullus, Cold Snout, Black Peter and Black Dog, for example, are common.

I know this cake prepared with butter biscuits and a cocoa coconut fat cream. Here you can get creative and try different kinds of cookies.

Invent a new cold dog family recipe! For the chocolate cream, I chose real chocolate. In the past, the cake was usually prepared with cocoa because the chocolate was too expensive.

The simple chocolate cake is even a good idea for Christmas: Try cold dog with specula, instead of butter cookies, refine the coconut chocolate mass with cinnamon and gingerbread spice.

Today I’ll show you my Kottbullar Swedish Meatballs Recipe. The original recipe comes from a colleague from Sweden.

Köttbullar is a traditional Swedish dish and most of us know the Swedish meatballs from the shopping trip to the furniture store Ikea.

Erik, the chef from Sweden, has created a homemade version of the Köttbullar together with me. This is a recipe refined by his grandmother in a chef’s style. 

For our Köttbullar cream sauce we use veal stock. Thus the sauce becomes particularly fine and also exists in the star kitchen. In addition, we show a simple variant based on broth.

Be sure to pay attention to the potato variety when making your own mashed potatoes. Mealy potatoes or potatoes that are mainly firm are ideal. This gives your puree a nice consistency. You can also serve the Swedish Pflanzerl with boiled potatoes, which is even easier and tastes delicious!

We prepare the Köttbullar with mixed minced meat. You can also take beef or elk meat. With veal prepared you would have another noble variant for your guest kitchen. Wish you good luck!

The most common question about this recipe is “Should I use tuna in oil or tuna in water? I have tested both variations over and over again and recommend the tuna in oil.

The spread simply becomes creamier and tastes fuller and stronger with Tonno in oil.

I also recommend tuna from sustainable fisheries, look out for the MSC.org seal on the packaging. You are doing something good for yourself and the planet!

Today I’ll show you my cod fish recipe for fish in an egg coat. This way of preparation is called Parisian style. I wrote and photographed this dish a long time ago for my first cookbook “Der Minutenkoch schmeckt.schneller.”. It’s a really simple fish dish and I use the square cod fillets available in the supermarket.

The cod fillets I put together are not necessarily my absolute favourite, but sometimes they are practical and especially popular in fast food. The side dish is a quick potato salad combined with lamb’s lettuce.

Vegan Lard Recipe, Onion Melt and Vegetarian Lard simply tastefully prepare

Today I’ll show you my recipe Vegan Lard. Vegan lard tastes delicious, the herbs and onions are tastefully excellent with coconut fat. In some regions this preparation is known as onion melt. 

So that the vegan lard can keep up with the animal lard, I add many roasted onions and plenty of marjoram or oregano.

What do I personally like about this lard? It goes fast, very fast, the vegetarian lard can be kept in the fridge for many days. Coconut fat is also extremely healthy. Use a chilled organic coconut fat with a little coconut taste. The inexpensive alternative is a commercially available coconut fat, which is partially “naturally” hardened. 

The vegan lard goes well with a good snack. Also other delicious vegetarian spreads, like the potato cheese, the Liptauer, the Obazda and the herb quark bring variety at dinner.

Making Currywurst yourself starts with choosing the right sausage, a Top Currywurst sauce recipe, a selection of curry spices and wonderfully homemade fries.

So that our brain cells can regenerate I have added a variant of the vegetarian Currywurst. Gourmets now only eat vegetarian or vegan currywurst!
