I am a friend of the use of regional ingredients, which are prepared according to the modern spirit of the time. I do not want to deprive our cabbage of its vitamins and colour and prefer short cooking times. Optics and taste experience are suddenly sensational and let the vegetables shine in new splendor!

Toast Hawaii, the ultimate Recipe for the 50’s Classic by the Chef

Here comes my recipe Hawaiitoast. The still popular combination “sweet plus hearty with cheese baked on bread” comes from the German economic miracle years.

In 1955, actor and TV chef Clemens Wilmenrod, who had no cooking training at all, introduced the fast snack to German TV viewers. There were only 3 channels 😉

Why Hawaii? Until the 50s Hawaii was the main producer of canned pineapples (Dole Food Company) and was then replaced by the Philippines and later Thailand.

Accordingly, Mr. Wilmenrod should have called his toast creation “Toast Philippines”.

Undisputedly, Hawaii sounds more melodic and you immediately have pictures of beautiful Hawaiian girls dancing hula in mind.

That’s a nice picture when preparing and enjoying the toast…

Boeuf à la Mode Recipe, Bavarian-Style Roast Beef Preparation

Today I show you my recipe Böfflamott or Boeuf à la mode. Boeuf à la mode is the Bavarian variant of the beef braised roast, you can refine the sauce with cognac.

For the preparation I recommend the “flat beef shoulder”, which is also called “shovel bow”. Other suitable pieces of meat for the roast beef are: False fillet, boiled beef, ball and flower or the tail roll. Ask your butcher or simply order the “flat beef shoulder”. 

I let the beef mature in a stain for 3-4 days. The stain consists of red wine, root vegetables, red wine vinegar and various spices.

A dry Burgundy is optimal for the Bavarian beef braised roast. The older the wine, the more powerful the sauce becomes.  I also prepare the sauce with veal stock.

Today I’ll show you my recipe for Meatloaf. Do you know “false hare”? The “wrong rabbit” is no rabbit at all. It is the name for a meat loaf with or without egg inside.

The following recipe comes from the kitchen of my dear mum and is a component of the traditional German kitchen.

It is suspected that the name “Falscher Hase” was given by the form of roasting in Germany. Likewise it is to be also because of the fact that the wrong hare was prepared in the same roaster, like the genuine hare bridge from the oven.

In Austria, however, this meat loaf with egg has a different name: Stefanie roast. The following instructions contain many step-by-step photos for the preparation of meat loafs.

It’s a poached redfish fillet with mashed potatoes and mustard sauce. The warm mustard sauce goes well with cooked seafood like cod, redfish, sole, plaice and salmon – as well as freshwater fish like pikeperch, trout, perch and carp.

You can fry or poach your fish, even freshly smoked fish goes well with warm mustard sauce.

I’ll show you the warm mustard sauce with fish in two + one variations. Both sauces work in less than 15 minutes.

In addition, I have added a quick recipe for cold mustard sauce: Keywords are Graved Salmon (Gravlax), Ikea Mustard Sauce, Smoked Salmon… So you can react flexible to the situation and wish you good success and a lot of fun cooking by yourself.

The recipe potato soup with crabs I present to you in this article. You can put this soup on your own table in less than 30 minutes and give your loved ones a real treat.

North Sea prawns taste absolutely great. These shrimps are browner than other small shrimps. You can order the prawns on the internet or prepare this soup with small, normal shrimps.

Besides potatoes I use carrots for the soup, because the sweetish taste of the carrot fits perfectly to the North Sea crab. To make the soup a highlight on the table, I mix part of the soup before serving. You can also prepare the soup with more inlay, in which case it’s already a potato stew with crabs.

A good liver sausage bread is always good. For me, beautiful childhood memories are linked to the liver sausage bread. After all, my grandfather from Lower Bavaria always had a real farmer’s liver sausage in his house.

He liked to make his grandson a hearty Bavarian snack with it. Grandpa Loibl also made the recipe for Bavarian Roast Pork. Look at the roast meat, it tastes really delicious!

Back to the bread with liver sausage: You can prepare it especially fine as shown below. Today I would add a small quail’s egg and serve the liver sausage bread as a small intermediate course in a brunch menu to my guests and loved ones.
