In Hamburg the eel soup is called like this because “aal” or “all” is in it. Most people know “all inclusive” – that’s how it is meant. It is originally a leftover soup that contains “alles” (= everything, High German) = “all” (Low German). The inclusion of the fish eel came later, it was not included at first.

Promised, our eel soup is with real eel and also the baked fruit, which belongs to it after Hamburg kind.

The spiritual centre of Mallorca is the sanctuary of Lluc with the Black Madonna statue. It is a religious centre in the middle of the lush nature of the Serra de Tramuntana.  The monastery is a world cultural heritage, for me personally a magical place with an incredible, positive vibration.

The restaurant Sa Fonda is located on the left side of the monastery. It offers its day guests and pilgrims original Spanish cuisine. In the kitchen there is chef Manuel who conjures up the most delicious traditional dishes of Mallorcan cuisine.

My Potato Gratin recipe I show you on this page. I got to know Gratin Dauphinois, as the recipe is called in French, during my apprenticeship in a restaurant that was awarded a star by the Michelin Guide.

Spaetzle Recipe for Original German Noodles named Spätzle

Today I’ll show you my Spaetzle recipe. We want to have a closer look at the popular side dish and then prepare it ourselves.

We also know Sp√§tzle by the names Spaetzla, Spatzen and Spaetzli. It is a Swabian or Alemannic pasta in elongated form. The related kn√∂pfle are rather round in shape and at home in the region of Baden-W√ľrttemberg and in Bavarian Swabia.

In Austria this pasta is called Nockerl.

Spaetzle, Knoepfle and Nockerl are egg pasta from fresh egg with an irregular form. The surface of this noodle is rough and porous, it absorbs sauces well.

How to cook Spaetzle: The whipped, tough dough is scraped in the traditional production over a Spätzle board (wooden board) directly into the boiling salt water.

Depending on the consistency of the dough, the spaetzle slicer produces short buttons or elongated spaetzle. The recipe presented here is a Bavarian-Austrian joint production and brings you delicious Spaetzle on your plate.

Boeuf à la Mode Recipe, Bavarian-Style Roast Beef Preparation

Today I show you my recipe Böfflamott or Boeuf à la mode. Boeuf à la mode is the Bavarian variant of the beef braised roast, you can refine the sauce with cognac.

For the preparation I recommend the “flat beef shoulder”, which is also called “shovel bow”. Other suitable pieces of meat for the roast beef are: False fillet, boiled beef, ball and flower or the tail roll. Ask your butcher or simply order the “flat beef shoulder”.¬†

I let the beef mature in a stain for 3-4 days. The stain consists of red wine, root vegetables, red wine vinegar and various spices.

A dry Burgundy is optimal for the Bavarian beef braised roast. The older the wine, the more powerful the sauce becomes.  I also prepare the sauce with veal stock.

I’ll show you the warm mustard sauce with fish in two + one variations. Both sauces work in less than 15 minutes.

Today I’ll show you my cod fish recipe for fish in an egg coat. This way of preparation is called Parisian style. I wrote and photographed this dish a long time ago for my first cookbook “Der Minutenkoch schmeckt.schneller.”. It’s a really simple fish dish and I use the square cod fillets available in the supermarket.

The cod fillets I put together are not necessarily my absolute favourite, but sometimes they are practical and especially popular in fast food. The side dish is a quick potato salad combined with lamb’s lettuce.

This type of preparation is really healthy. I only use olive oil and some butter for the potatoes.
