For the Tuna Steaks |

1 | pc | carrot |
1 | tbsp | peanut oil |
1 | pc | clove of garlic |
1 | tsp | brrown sugar |
4 | tbsp | Soy sauce |
For Wasabi Foam or Wasabi Cream |

1 | tsp | wasabi paste |

2 | tbsp | Cashew nuts roasted and salted (or almonds or pumpkin seeds) |
Instruction

Defrost the tuna steaks overnight in the fridge. Alternatively, place the tuna steaks in the foil in cold water. Unpack the tuna steaks and pat dry. Make one whole or one half tuna steak per portion ready for breading. Preheat oven at 100°C hot air, keep 4 plates warm for serving in the oven.

Prepare a breadcrumb road for tuna in the sesame crust: Mix the corn starch in a bowl with some cold water. Prepare tuna steaks and sesame seeds.

Prepare tuna steak with sesame seeds: First pull the tuna steak through the starch water, the entire fillet should be moistened with starch water.

Then place the tuna steak in the sesame seeds and gently press on the breadcrumbs. The result is tuna in the sesame crust. Prepare the breaded tuna steaks and natural tuna steaks for frying.

Prepare the vegetables: Place the soya bean sprouts, eighth-cut Pak Choi and carrot cut into strips in a large pan and sauté with half of the peanut oil and lid for 4 minutes. Then open the lid to preserve the beautiful colour of the vegetables. Quickly raise the temperature, finely cut the garlic, put the sugar and soy sauce on the bottom of the pan and heat it up. Glaze the vegetables at high heat. Keep the vegetables warm next to the stove.

Prepare wasabi foam: Put the cream with wasabi paste into a mixing cup and add some lime juice. Lightly mix the Wasabi foam with a hand blender.

In a second pan, fry the tuna steaks with the remaining peanut oil on both sides, then quickly remove from the pan and keep warm. Prepare the plates for serving, arrange the vegetables, add the tuna steaks, put some wasabi foam on the plate and serve quickly decorated with herbs and goji berries.
Coriander or parsley goes well with this dish, both are excellent with this fish dish. I used mountain coriander, it looks great and tastes delicious. Serve half a lime with this dish, so anyone can add a little more lime juice.
