Ingredients

1 pc onion finely diced
1-2 pc cloves of garlic
80 ml dry white wine (or prosecco)
2 tbs Olive oil
1 packet strained tomatoes (or canned tomatoes)
1 tsp brown cane sugar
1/2 tsp Salt
4 pinch Pepper
1 tsp thyme (or oregano or basil)

Instruction

Finely dice shallots
Whole and skinned shallot, peeled and diced.

Prepare onions

Halve onion and garlic, peel and chop finely.

Place a pot on top and heat two tablespoons of olive oil.

Fry the onion cubes and garlic cubes in the pan with color

Sauce base

Sweat the onion and garlic cubes in the pot for a few minutes until colourless.

Optionally add a little sugar and caramelise lightly.

Prepare the pasta sauce with garlic and onions
Deglaze onions and garlic with white wine and stock and bring to the boil.

Deglaze

Deglaze with the white wine, add the tomatoes and bring to the boil.

Let the sauce simmer for about 15 minutes.

Note:

Some tomato stems increase the flavour of the sauce and can be cooked with it.

Finalize

Season the sauce with salt, pepper, sugar and herbs to taste and serve.

For the simple tomato sauce you need either canned tomatoes whole or in cubes, or strained tomatoes.

I like to use whole canned tomatoes because I love the tomato pieces in the sauce.

But that remains a matter of taste, it is up to you which kind you use.

The remaining ingredients are onions, garlic, white wine, salt, pepper, sugar.

Optional thyme, basil, Italian herb mixture and tomato paste.

In the best case the delicious tomato sauce consists of 7-8 ingredients including pasta.
