Ingredients

1 Piece onions (or shallots)
1-2 Piece glove of garlic (or young green garlic)
120 ml dry white wine (or Prosecco)
2 tbsp Olive oil
2 cans canned tomatoes (Canned tomatoes or 500g of tomato passata)
1 tbs brown can sugar
1/2 tbs primal salt
4 Pinches black ground pepper
1 tsp thyme (or oregano or basil)
4 Slices toast bread
20 g butter
some parmesan
some basil fresh

Instruction

Halved garlic and halved onion.
Peel garlic and onions.

Onions and garlic

Halve, peel and finely dice the onion and garlic.

If available, I like to use young garlic and shallots, these have a finer aroma.

Set up a saucepan and heat two tablespoons of olive oil.

Sauté vegetables.
Sauté the onion and garlic until translucent.

Prepare soup

Sweat the onion and garlic cubes in the pot for 10 minutes until colourless.

Optionally add a little sugar and lightly caramelize the starter for the tomato soup.

Cook soup

Deglaze with the white wine, I like to use Prosecco, add the tomatoes and bring to the boil.

-> Let the soup simmer for 15-25 minutes.

-> This is the best way to develop the fine taste of the soup.

–> Insider tip: season the soup with a little soy sauce.

–> Add salt, pepper and sugar to taste.

Bread cubes

Cut the toast into cubes and toast in the pan with butter. Season with thyme, salt and pepper.

–> Adding a halved clove of garlic creates a fine garlic aroma.

Prepare parmesan

Finely grate some parmesan and prepare for serving.

Prepare basil

Pluck the basil for decoration and finely chop a few basil leaves.

–> Stir in the finely chopped basil leaves after the soup has boiled and do not boil anymore.

–> This creates a very fine aroma.

Serving

Serve the tomato soup:

–> Prepare warm soup bowls or soup plates

–> Taste the soup again and pour it in

–> Decorate the bread cubes in the middle

–> Put on the basil leaf

–> Sprinkle with Parmesan cheese

–> Dribble olive oil sparingly onto the tomato soup.

3. Easy To Prepare Tomato Soup With Canned Tomatoes

For the simple tomato soup you need either whole or diced canned tomatoes , tomato passata or fresh tomatoes .

I like to use whole tomatoes from a can because I find the tomato pieces in the soup delicious and the soup gives the soup more structure .

The remaining ingredients are olive oil , onions , garlic , white wine , salt , pepper , sugar .

Thyme , oregano , marjoram or basil are good herbs .

If you want to go fast, you can use a frozen Italian herbal mixture. Unfortunately, the herbs become very dark in appearance.

Tomato paste and a little soy sauce are flavor enhancers for the soup!

4. Prepare Tomato Soup Canned Tomatoes Very Quickly

My recipe for tomato soup is absolutely simple :

Finely dice the onion and add one or two cloves of garlic .

Please never press the garlic because it will make it bitter.

Garlic is also not chopped but finely sliced with a sharp knife.

Put the garlic and onion cubes in a wide, large pot and sweat them with two tablespoons of olive oil for 10 minutes .

This serves to develop the taste , then deglaze with dry white wine or Prosecco and add the tomatoes.

You can use tomato passata, chunks , or chopped fresh tomatoes .

Tomato soup tastes great with fresh tomatoes and canned tomatoes, even star chef Johann Lafer recommends using canned tomatoes.

Let the tomato soup simmer gently for 15 minutes at medium temperature , season with salt, pepper and a little sugar.

Just before serving, mix up the soup and season with thyme, oregano, marjoram, basil or Italian herb mix.

You can use fresh tomatoes or canned tomatoes for tomato soup.

5. Chef’s Tips for Preparing Tomato Soup Canned Tomatoes

You can caramelize the onions and garlic with a little sugar shortly before deglazing with white wine .

This gives the soup more depth of flavor later on.

Let the tomato soup simmer for a good 20 minutes so that the flavor can develop wonderfully .

Be careful with the tomato paste , although it brings a strong tomato flavor to the soup, it takes away the freshness and lightness of the soup .
