You need a quail sauce and triggered quail for this dish.

As a rule, this pasta is a second-day dish for me to use up leftovers.

Many years ago I cooked this pasta dish just after Christmas for the staff party.

Once the sauce is cooked and the quail are prepared, this dish is a quick success.

Ingredients

8 Pieces Quails (Fried)
500 ml Quail Sauce
4 tsp cowberries
120 g grated parmesan
1/2 Bunch basil fresh (Or parsley)
primal salt
black ground pepper
Cayenne pepper
brown cane sugar

Leftover tip

Make a note of this dish to use up leftovers.

Ideal when there is leftover meat and gravy:

Roast goose and goose sauce

or

goose legs

or

Roast duck legs and roast duck

or

Thanksgiving Turkey and roll roast turkey

Prepare poultry

Prepare Roasted quail whole or heat the already roasted quail in the oven.

Trigger poultry

Alternatively, trigger the quails and prepare them for roasting.

Cook noodles

Cook the pasta.

–> Boil a pot with water.

-> Add salt.

–> Add olive oil according to personal taste.

–> Insert the pasta and cook al dente.

Note:

Gluten-free pasta is less sticky when cooked with oil.

Fry poultry

Season the quail breasts and drumsticks with salt and pepper.

Heat a pan and fry the quail pieces skin side down in a little sunflower oil.

Allow the meat to fry over a reduced heat and place in the oven at 100°C.

Prepare herbs

Lay out the basil or parsley and pluck finely.

Chervil would be another variant.

I only had basil in the house around the holidays.

Finely grate the parmesan
Finely grated Parmesan on the cutting board.

Prepare cheese

Finely or large grate the Parmesan cheese and set aside.

Prepare compote

Prepare cranberries from the jar or home-made cranberry compote.

Cooked spaghetti
Boiled spaghetti on a colander.

Drain pasta

Drain the noodles into a colander and shake well to dry.

Arrange the noodles on warmed plates.

Mix quail sauce
Mix the quail sauce with the hand blender

Prepare sauce

Bring the quail sauce to the boil, season with salt, pepper, cayenne pepper and a little sugar to taste.

Mix or mount the sauce with cold butter and prepare for serving.

Serve

Arrange the chicken pieces on the pasta.

Drizzle the pasta dish with the sauce.

Add the herbs, cranberries and parmesan.

Serve quickly!

3. Eating Leftovers Quail With Pasta And Variants

You can easily modify this recipe for other poultry dishes.

The noodles with meat from duck legs and roast duck taste really great.

You can also use leftover meat from turkey and roast turkey as well as the sauce that has been boiled down.

Pigeons and pigeon jus are also a great twist on this dish.

Deboned meat from roast goose or goose legs and goose sauce taste fantastic with the noodles.

Optionally, you can use tagliatelle instead of spaghetti.

I cooked the dish shortly after Christmas, the pantry was already a bit empty 🙂
