Simple instructions for preparing risotto with pumpkin.
|4||Cup||Vegetable broth (I use more as needed)|
|4||Pinches||black ground pepper|
|2||Pinches||brown cane sugar|
|2||EL||roasted, salted pumpkin seeds|
|2||tsp||pumpkin seed oil|
Peel the pumpkin with a knife and thinly remove the tough skin.
Halve the pumpkin and deseed it with a spoon.
Cut the pumpkin, add to the pot with the rice and butter.
Sauté the rice and pumpkin for four minutes until colorless, stirring as you go.
Deglaze the risotto with the vegetable stock and gently simmer for 18-20 minutes, stirring.
Finely grate the parmesan cheese.
Check the doneness of the rice grains.
Season the risotto with salt, pepper, nutmeg and cayenne pepper.
Add butter or optionally olive oil and mix until creamy.
Arrange the risotto on hot plates.

–> Sprinkle with a little cheese
Optionally, you can add a few drops of pumpkin seed oil.
