      Ingredients
      • 6-8 potatoes floury potatoes, small
      • a little Butter
      • 8 olives black, pitted
      • 1 small onion
      • 4 pickles medium size
      • 1 tbsp capers
      • 3 eggs
      • 3 pieces of herring fillet matjes
      • 200 ml soy cream
      • a little chilli pepper dry
      • salt
      • pepper
      • 1 bunch of chives

      For the herring salad with jacket potatoes, first boil the potatoes in salty water, peel them, turn in butter and season with salt and pepper. Set aside and keep warm.

      Prepare all ingredients from the list in a bowl.

      Halve the olives, slice the onion and the pickles, whole capers, separated eggs, cut yolk and egg white in tiny pieces, also cut finely the herring fillet.

      Season all ingredients to taste with soy cream, salt, chilli and pepper.

      Serve the herring salad with jacket potatoes and sprinkle it with chives.
